Like many of you, The Baconer team and our kids were working remotely and Zoom-schooling from home during the pandemic. Suffice it to say, we’ve had our fair share of lunch time challenges. Just when we thought we’d found something we were sure our kids would love, the very next day they wouldn’t touch it at all. Back to the drawing board! Urgh!
But we found a way to clear the meal-time hurdles by incorporating our secret ingredient—bacon—to help avoid the mid-day mealtime rut!
With bacon, we re-imagined sandwiches and added plot twists to traditional lunch recipes. We even crafted sandwiches that brought back memories of when we were all grade-school kids, only this time around, we used ingredient additions for the grown-up us!

Aka.The PBJ&B … the second B is for “Bacon”. This one is definitely not your “put-it-in-a-tin-lunchbox-with-your-He-Man-thermos” kind of peanut butter and jelly sandwich, OK?!? This is a grown up Peanut Butter and Jelly sandwich.
Nothing hits the spot like a perfect grilled cheese, ESPECIALLY when it’s loaded with extras like XXL Bacon Steaks & fig jam! This is our favorite variation, but the possibilities are endless. Swap the fig jam out for fresh slices of sweet pear, or go savory with Smoky Paprika Small Batch Bacon & fire roasted poblano chile. No matter where you go with it, if it’s stuffed in a grilled cheese it’s sure to be delicious!
The venerable Monte Cristo is the ultimate make-at-home sandwich for us. Hot, meaty, cheesy, fried in batter, it checks all the boxes. It’s like a Ham & Cheese Croissant and French Toast had a baby and named their new glorious creation: Monte Cristo. We put our own spin on this classic, building it on fresh sliced Brioche, swapping out the baked ham for our Thick Cut Strips, adding in some sliced smoked turkey from our local deli and using Gruyere for the melty cheese. The result? Sweet, salty, bacony goodness, pillowy soft and crisped to perfection.
Ok, so we’ve always had two family favorite sandwiches. The first is the classic Reuben. The second is the Cuban sandwich, with its hot & melty ham & roast pork combo, accented by sharp mustard and dill pickle. But one day we thought, why have a first and second favorite when we can combine them into one ultimate Super-Sandwich that encompasses everything we love to put between two slices of bread? This one is love at first bite!
These are our kids’ favorite go-to for lunch (and picnics and dinners…)! And we know hot dogs don’t have to be basic.
