2 cups True Origin Foods Organic Black Turtle Beans
6 cups water
Salt
Ingredients For The Rice:
2 cups True Origin Foods Organic White Jasmine Rice
3 cups water
2 tbsp butter
Ingredients For The Toppings:
8 oz The Baconer Smoked Lardons
Radishes, trimmed
Avocado
Cilantro
Salt
Directions
Rinse beans in cool water.
Cook the Ground Bacon in a skillet. Remove from pan, leaving fat in the skillet and set aside.
Add shallots and garlic, and saute until soft.
Add beans, water, Ground Bacon and bay leaves. Bring to a boil, then simmer, cover and cook until tender, 1-2 hours.
Meanwhile, combine rice, water and butter in a pot and bring to a boil. Cover with a lid, reduce heat to low, and cook for 15 minutes. With lid on, remove from heat and steam for 10 minutes. Fluff with a fork.
While beans and rice are cooking, fry Smoked Lardons in a skillet and set aside.
To prepare the radish/avocado salad: half the radishes and slice them thinly.
Cut avocado into 1” cubes.
Combine the radishes and avocado in a bowl and drizzle with ime, salt and cilantro to taste.
Plate in a bowl rice and beans. Top with radish and avocado salad and Smoked Lardons.
