Bacon Wrapped Peaches

 

After another Bay Area summer in the fog, September & October finally bring the most spectacular weather of the year, and here at The Baconer HQ that means wrapping everything we can find in bacon and throwing it on the grill. The markets are loaded with peaches as we head into the end of their season, and this dish has proven a reliable crowd pleaser for late summer outdoor dining. The sweet peaches caramelize beautifully on the grill, the bacon brings the crunch & smoke, and the balsamic glaze and fresh basil garnishes layer on the perfect tang and herbal aroma to tie the whole thing together into a mouthwatering bite that will have you ruining your appetite before dinner.

 

Bacon wrapped peaches

Makes 16 bites

INGREDIENTS

  • 8 Strips Smoked Maple Bacon
  • 2 ripe peaches (white, yellow, or 1 of each)
  • Balsamic glaze
  • Fresh basil, chopped

RECIPE

  1. Heat grill to med
  2. Cut each peach into 8 wedges
  3. Cut each bacon strip in half
  4. Wrap each wedge with a half strip of bacon, secure with a toothpick
  5. Place wrapped peaches on the grill, cooking first side until bacon is crisped to your liking and the peach flesh has browned and started to caramelize
  6. Flip wedges and cook other side
  7. Remove from grill and let rest 2-3 minutes
  8. Arrange on serving platter, drizzle with balsamic glaze and garnish with a sprinkling of chopped fresh basil
