Sheet Pan Chicken

Serves 6 to 8


  • 1 large potato, scrubbed clean and cut into wedges
  • 1 purple onion cut into wedges
  • 12 oz Bacetta, Cracked Pepper or Smoky Paprkia Lardons
  • 1 sourdough baguette torn into 2" pieces
  • 2 tablespoons cold butter cut into .5" cubes
  • 4 fresh oregano sprigs

  • 1 teaspoon crushed pepper flakes
  • 1/4 cup extra-virgin olive oil

  • Kosher salt
  • black pepper
  • 1 whole chicken cut into 8 pieces


  • Preheat the oven to 400°
  • In bowl combine potato, onion, lardons, bread, butter, oregano, pepper flakes and olive oil. Toss to combine.
  • Season with salt and pepper and lay out on baking sheet (sheet pan)
  • Roast mixture for about 7-10 minutes
  • Meanwhile, sprinkle salt and pepper on chicken pieces
  • Remove potato mixture from oven and arrange chicken on top of mixture 
  • Return to over and roast for another 35 minutes or until chicken registers 160°.
  • Remove and serve
