Dates stuffed with Stilton, wrapped in bacon
1 package high quality Medjool dates
12 oz Bourbon bacon or Sweet Maple bacon
Preheat oven to 450
Split the dates lengthwise, keeping one side attached (so they form a little shell) and remove the pits.
Stuff each date with ample cheese. Remember, some of the cheese will melt and drip out of the date while cooking so don't be afraid to use more cheese than you think you need.
If the bacon strips are long, cut them in half since you only need to wrap the date once.
Wrap a piece of bacon around each date and secure it with a toothpick.
Lay the wrapped dates on a foil lined cookie sheet. Use a rack if you have one.
Bake for 20-25 minutes depending on how crispy you want the bacon.
Let cool before eating.
